Cheese cake tarts

These are my favorite things to make (I might say that about everything) but really they are to die for....
First Preheat your oven 350
Then you make your batter here is the recipe for that
2 eggs
1tsp. vanilla extract
1 c sugar
2- 8 oz packages of cream cheese (softened)

Beat the cream cheese until it's soft, add sugar and vanilla, beat well. Add eggs 1 at a time beating well after each one.

To bake them line your cupcake pan with with cupcake inserts and place a vanilla wafer in the bottom flat side down (this will be your crust)

Pour the batter in each one 2/3 to 3/4 full (try to keep them all the same)
Cook for 20 minutes they will slightly brown
Here is the fun part, when you pull them out of the oven as they start to cool the center will fall
(you want that)
It will give you a small dish like place to put your filling
See?

Once they are cooled top with pie filling or pudding (what ever you like)
They are very easy and you will love them
1 batch makes between 12 & 18
Thinking this will be a great treat for Thanksgiving!

Easy Cinnamon Rolls

This is a recipe I got from my mom and it is one of my favorites, I used to love it when we would get home from school during the winter and she had warm cinnamon rolls waiting.
This is a very easy recipe, give it a try

Easy Cinnamon Rolls

3 Tbsp. yeast
3/4 c water
3 c scalded milk
3/4 c sugar
3/4 c shortening
3 tsp. salt
10 1/2 c flour
3 eggs

Soften yeast in water.
Combine milk, sugar, shortening and salt cool to luke warm. Add 3 cups flour beat well
Beat in yeast and eggs. Add remaining flour gradually, forming soft dough, beat well.
Cover and let rise until double. Roll out on floured surface spread with melted butter, sprinkle with cinnamon and brown sugar
Cut in 1 in. slices, let rise
bake 350 for 10-12 minutes
frost while warm

This recipe makes a ton I mean like 50 so I usually just cut it in half just use 2 eggs

I used a cream cheese frosting recipe I found here it is seriously the best I could actually just eat the frosting and be perfectly happy, Just remember to refrigerate any thing that has been frosted & your frosting.

Perfect Cream Cheese Frosting
Ingredients:
2 8-oz. packages cream cheese (light works fine, although it will yield a slightly softer frosting) at almost room temperature
1/2 cup salted butter at almost room temperature
2 cups sifted powdered sugar
1 teaspoon vanilla or almond extract
Instructions:
Whip together the cream cheese, butter, and extract until light and fluffy. Add in the powdered sugar and whip until smooth and fully incorporated.
